If you're feeling overwhelmed when organizing your home or even one room, just start with one area of a room, like the junk drawer in the kitchen. You will have a greater sense of accomplishment when you're done which will build enthusiasm and momentum to take on other areas. Commit to that area until you're done.
Don't think of organizing as a boring chore but instead think of it as a way of clearing bad energy and creating functional space that will bring you joy every time you see it and/or are able to find what you're looking for. Mindset is key. Turn on music or invite a friend over to help and cheer you on.
I like to have the organizing products on site before I start a project and I always over purchase products and return what I don't use so I don't slow momentum or stop progress.
